- 3/4 cup water
- 4 eggs, beaten
- 2 2/3 cups flour
- 1 1/2 teaspoons salt
- 1 teaspoon ground nutmeg
- 2 teaspoons ground cinnamon
- 2 teaspoons baking soda
- 2 1/4 cups sugar
- 1 cup golden or white raisins
- 1 cup crushed walnuts
Preparing the Pumpkin
If you begin with fresh pumpkin, cut the flesh into pieces and cook it for about 20 minutes, until completely soft. Drain it well and mash until smooth. Watery puree makes a heavy loaf, so let excess moisture leave before measuring two cups.
Grease and flour two loaf pans. Heat the oven. Set aside a few raisins and walnut pieces for the tops if you want the loaves to show their harvest plainly.
How to Make Pumpkin Bread for Samhain
- In a large bowl, whisk the pumpkin pulp, corn oil, water, and beaten eggs until the mixture becomes smooth and deep orange.
- In a second bowl, combine the flour, salt, nutmeg, cinnamon, baking soda, and sugar.
- Add the dry ingredients to the pumpkin mixture in two or three portions. Fold only until the flour disappears.
- Add the raisins and crushed walnuts. Turn them through the batter so they are distributed from end to end.
- Divide the batter between the prepared pans. Scatter the reserved fruit and nuts over the surface.
- Bake for 50 to 60 minutes. The bread is ready when the center feels firm and a skewer comes away without wet batter.
- Leave the loaves in their pans for ten minutes, then turn them onto a rack or wooden board to cool.

Texture and Harvest Variations
The batter should fall slowly from the spoon. If the pumpkin puree is very thick, add a little of the measured water; if it is loose, hold some water back. Pecans may replace walnuts, and chopped dried apple may replace part of the raisins. Keep the total amount of fruit and nuts near two cups so the loaves can rise around the harvest rather than collapse beneath it.
Serving and Keeping the Bread
Serve the pumpkin bread with cream cheese, as the original recipe suggests. Butter, apple preserves, or a narrow thread of honey also suit it. The flavor deepens overnight, making this a useful bread to bake before the Samhain observance begins.
Wrap the cooled loaves well. Keep one at room temperature for several days and freeze the other if desired. A single slice may be placed on the ancestral table and removed respectfully after the rite.
