Sun God Sausage and Eggs for Samhain

Recipe Name: Sun God Sausage and Eggs for Samhain

  • 0.5kg of pork sausage
  • 4 boiled eggs
  • 1/4 cup of butter or margarine
  • 1/4 cup of flour
  • 2 cups of milk
  • 1 pack of frozen corn (about 50-500g)
  • 1 cup of bread crumbs
  • 1 cup of chopped turnips
  • 1 zucchini, cut in slices
  • 1/2 teaspoon of salt

Cook the sausages and turnips together in a frying pan, and allow them to dry. Boil the zucchini slices in a pot until they are tender, and allow them to dry. Cut 2 eggs and use them to place a layer for deep baking. Place half of the zucchini on the second layer. Melt the butter or margarine and mix it with flour, salt and pepper. Pour some milk in the mix. Cook everything while stirring constantly, until the mix thickens and boils. Add the sausages and corn. Pour half of the mix into the dish with eggs and sausages. Arrange the zucchini on top and pour the remaining mix. Cut the remaining eggs and place them on top. Add bread crumbs, place everything into the oven and cook at 190c degrees for 30 minutes.
