Pumpkin Placinte for Samhain

Pumpkin Placinte for Samhain folds sweet grated pumpkin inside a tender sour-cream dough. The pastry is rolled, filled, sealed, brushed with butter, and baked at a bright heat until the crust turns gold. Beneath that crust waits the orange harvest, fragrant and soft.

Make it while Samhain candles are being prepared or for the morning after the vigil. The folded dough resembles a closed threshold: what summer grew is kept safely inside as winter approaches.

Cook time:approximately 25 to 30 minutes, plus chilling
Oven: 200–220°C / 400–425°F
Yield: one large placinta or several smaller pastries

Ingredients for Pumpkin Placinte

  • 350g flour
  • 1 egg
  • 2 tablespoons butter, plus more for brushing
  • 2/3 cup sour cream
  • 1 tablespoon sugar for the dough
  • 1/3 teaspoon salt
  • 400g pumpkin pulp
  • Additional salt and sugar to taste for the filling

Preparing the Pumpkin Filling

Grate the raw pumpkin pulp into a bowl. Add a small pinch of salt, mix, and leave it to stand for 15 to 20 minutes. The salt draws out water that might otherwise soften the pastry.

Squeeze the pumpkin gently and pour away the released liquid. Add sugar according to the sweetness of the pumpkin and your own table. Begin with two tablespoons, taste, and add more only if needed. The filling should remain earthy beneath its sweetness.

Making the Sour-Cream Dough

  1. Sift the flour into a wide bowl and make a hollow in the center.
  2. Add the sour cream, softened butter, egg, salt, and one tablespoon of sugar.
  3. Mix from the center outward until a soft dough forms. Knead briefly, only until smooth.
  4. Shape the dough into a ball, cover it, and chill for 30 to 40 minutes.
  5. Heat the oven and prepare a lined or lightly greased baking tray.
  6. Roll the chilled dough into a broad circle or divide it for smaller pastries.
  7. Place the pumpkin filling in the middle, leaving a clean border around the edge.
  8. Draw the edges together over the filling and seal them firmly. Turn the pastry seam-side down if its shape allows.
  9. Brush the surface with melted butter and cut one or two small openings for steam.
  10. Bake for 25 to 30 minutes, until the crust is deeply golden and the pumpkin is tender.

A Blessing for the Folded Harvest

As you close the dough around the filling, say:

“Golden harvest, hidden flame,
Sleep in the fold where I seal your name.
Dough be the threshold, pumpkin the light;
Keep summer’s sweetness through Samhain night.
What earth has given and hands prepare,
Return as warmth to all gathered here.”

Shaping Smaller Placinte

For individual pastries, divide the chilled dough into six pieces. Roll each into a thin circle, add a modest spoonful of filling, and draw the edges toward the center like a gathered pouch. Flatten gently with your palm and place seam-side down. Smaller placinte usually need 18 to 22 minutes in the hot oven. Watch the underside as well as the top; butter and sugar darken quickly.

Brush them again with melted butter as soon as they leave the oven.

Serving Pumpkin Placinte at Samhain

Let the pastry rest for ten minutes before cutting so the filling settles. Serve it warm, dusted lightly with sugar if desired. Sour cream at the side makes the sweetness darker and more grounded.

For smaller placinte, divide the dough and filling evenly, then reduce the baking time and watch for browned edges. Cinnamon or nutmeg may be added, though the original recipe allows the pumpkin itself to remain the central flavor.
