Normanic Chicken for Mabon brings together orchard fruit, woodland mushrooms, cream, and apple brandy in a pan darkened with butter. The recipe is Norman in spirit and well suited to the autumn equinox, when apples bend the branches and the evening table asks for something warm and abundant.

The sauce is pale gold. The apples keep a little of their shape. Beneath them, the chicken carries the harvest fragrance of Calvados and earth.

Ingredients for Mabon Norman Chicken

  • 4 boneless chicken breasts
  • 2 apples, peeled, quartered, and cut into large pieces
  • 200g mushrooms, halved or thickly sliced
  • 6 tablespoons Calvados or another apple brandy
  • 6 tablespoons fresh cream or sour cream
  • 2 tablespoons butter, divided
  • Salt and black pepper to taste

Preparing the Orchard Ingredients

Season the chicken with salt and pepper. Choose apples that will soften without vanishing completely; a firm tart variety keeps a bright edge beneath the cream. Cut the mushrooms thickly so they remain present in the finished sauce.

How to Cook Normanic Chicken

  1. Melt one tablespoon of butter in a large frying pan over medium-high heat.
  2. Add the chicken breasts and brown them for about ten minutes, turning once. They should be golden outside but not yet completely cooked.
  3. Move the chicken to a plate. Add the second tablespoon of butter to the same pan.
  4. When the butter foams, add the apple pieces. Brown them on several sides, then transfer them to the plate with the chicken.
  5. Add the mushrooms to the pan and fry over high heat for about four minutes, stirring occasionally, until they soften and take on color.
  6. Return the chicken and apples to the pan. Lower the heat.
  7. Move the pan away from open flame before pouring in the Calvados. Return it to gentle heat and allow the sharp alcohol scent to soften.
  8. Add the cream one tablespoon at a time, stirring it into the browned juices.
  9. Cover loosely and cook for 10 to 12 minutes, until the chicken is done and the sauce lightly coats the spoon.

Balancing the Apple-Cream Sauce

If the apples are very sweet, use sour cream or add a few drops of lemon at the end. If they are sharply tart, fresh cream will round the sauce. Keep the heat gentle once the dairy enters; hard boiling can split the pale emulsion. Should the sauce become too thick, loosen it with one spoonful of water or apple juice at a time.

Serve as soon as the sauce becomes smooth.

Serving the Mabon Chicken

Serve the chicken with the apples and mushrooms spooned over it. Mashed potatoes, buttered noodles, rice, or dark bread will catch the sauce. A little chopped thyme or parsley may be scattered across the plate.
